Once Obama Time -Do you eat fairy tails?

I LOVE my father-in-law!  He has come up with several of these and the last time he was in Little Rock we recorded one.  It was literally minutes before they left for the Hill-Billy Airport so there were no do-overs and my kids were "helping" as kido's do.  

Well now they are about to leave to serve a 2 year mission for the Church of Jesus Christ of Latter Day Saints.  I loved it so much I wanted to share it on my blog. 


Are we going to let Obama feed us fairy-tales, or are we going to elect Romney and build a future for our children?  I don't want to eat fairy's tails.....do you?

Chocolate Chip Oat Beananna Chia Hemp Protein Cookies


Yep, Bean-ana!  Gluten and Fat FREE!  The hemp protein, not to be confused with a certain illegal substance, is a cousin and does not have the "kick".  It is made from the stock of the plant and as of yet is NOT legal to grow in the U.S.  Mine is Bob's Red Mill brand and is perfectly legal and packed with good nutrients.  Many protein powders are whey, pea, or soy and I am allergic to all of those things.

So getting a little sick of smoothies EVERYDAY.....I modified a fav. recipe and created these Gems!  OK Park friends, instead of taking a nap, I typed this up for y'all! -Your welcome.

Chocolate Chip Oat Beananna Chia Hemp Protein Cookies
-Gluten and Fat Free!

I usually double the batch

Place the following dry ingredients in a bowl and mix.
1 1/2 cups Oat Flour -put it in your blender for a few seconds.
1/4 cup Hemp Protien -more or less, you decide.
2 TBS Chia seeds-more or less, you decide.
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg-optional
1 tsp cinnamon- optional but healthy
1/4 tsp ginger-optional
1 3/4 cups quick oats, NOT blended in blender.
1 cup Semi Sweet chocolate chips -NOT OPTIONAL ;-)
1 cup Nuts- TOTALLY optional

In a mixing bowl blend:
1/2 can white great northern beans (put water and all in the blender and blend till smooth like butter.  Save the other half in the freezer for another time.)
2 mashed brown bananas-the browner and mushier the better!
1 Cup Sugar- white, brown, raw or splenda, you choose
1 egg
1 tsp vanilla

Slowly add the dry ingredients with Semi Sweet Chocolate Chips and or if you are crazy add nuts until blended.  Sometimes I let this sit for a few minutes to give the oatmeal time to absorb the liquid and mix as I go.  Spoon onto NON-Greased cookie sheets.  Bake at 350 for 10-12 min.  Remove immediately from pan and place on cooling rack.  Store lightly covered NOT sealed.  These freeze well IF you have any left over.

Easter 2012, The Hunt and Easter Sunday

Cha-cha-cha- Chia SEEDS


BTW I am not getting paid in ANY shape or form to say the following.  It is working for me and I thought I would share this info.

OK, Chia Seeds or name brand Salba (Salvia hispanica L.) have changed my life!  And hopefully my diabetics' life too!


I use them in pancakes, baked goods, protein shake, crystal light.....





You need to know that I naturally SHUN ANTHING that is labled "good for you" or "organic."    I am a Chocoholic and Carbaholic.  I graze in the pantry more often than I should and I'm trying to reform myself from using food as a comfort--Except for Blue Bell IceCream....Oh that Coconut Fudge is something!  

That said:  I have thyroid problems and have NO ENERGY and 4 boys, 5 counting my husband.  My 12 y/o is type 1 Diabetic and most of my energy goes to keeping him out of the hospital.  I have been gaining weight...even when I work out and watch what I eat.....I watch every bite I take-LOL. 

I knew it was time for a change, I knew I needed to take care of myself so I could have energy for my family.  I also knew I didn't have time, money, or energy to join a program.   Enter.........Chia Seeds  via Dr. Oz-which I rarely watch.

So..... Chia seeds have Mayan and Aztec roots.  Who knows maybe Captain Moroni was able to sustain himself and his 2000 Warriors through battle with these little gems.  I found mine at Whole Foods OR you can go online Bob's Red Mill Chia Seeds Walmart online free shipping

Here is the skinny on them:  
  • They don't taste!  They have a texture of micro tapioca or jello beads if there were such an thing.
  • They are more nutrient dense than flax
  • More Potassium than a banana
  • easy to digest, NO known Allergies, help "regulate" your system if you know what I mean.
  • complete protein all in themselves
  • Hold 10x weight in liquid- expand into a "chia gell" when added to liquid 9:1 ratio (10%-ring a bell?)
  • have very little taste but can extend food or liquids--Emergancy Preparedness???, extend flavor instead of diluting it
  • excellent weight loss helper-they take longer to digest, expand in your tummy and help you feel full longer
  • help keep blood glucose/sugar even longer-help with diabetes
  • Carb controllers- some of your carbs get locked inside these guys and pass through your digestion system without being used or turned into fat.
  • Acid Controller-1-2 teaspoons swallowed dry, let them soak up stomach acid for 10 min, then drink a full glass of water!
  • Yo make a gell.1:9 Ratio with water, soak for 15 min, store in jar in fridge for 1 week.
  • Use gell as egg substitute
  • Use gell as fat substitute
  • Toast them and sprinkle on Yogert
  • The NEXT BIG thing for ENERGY DRINKS-I add them to my crystal light (2 tsp).  Chia Coconut water will be HUGE!
  • Add to batters and dough:  cookies, bread, pancakes, whatever! (2 tsp- 2 TBS)-helps retain moisture!  Extra nutrients-what a deal!
  • Mix them into Nutella or Peanut Butter
  • Heck, I guess the only things they don't do: dishes, laundry and windows-They do help take out the garbage/clean the inside garbage-get it?
  • Make jam, pudding...
  • Grow some Cha-Cha-Chia sprouts to add to a salad or sandwich!!!!
  • I think I'll stop now.  Research for yourself.

I TRUELY have MORE energy than I have had in YEARS.  I put 2 teaspoons in with my protein drink (purchased at whole foods)  each morning and use them again in my lemon water or Crystal Light in the early afternoon.  
  They sustain my energy and keep my belly feeling full.  I have lost 5 lbs in 1 1/2 weeks and I feel better.
